Chocolate Chip Zucchini Banana Muffins

Tis the season for zucchini! I’ve already started seeing coworkers leaving their extras in the break room at work. I’m slightly ashamed to say though, I have no homegrown zucchini this year 🙁 I got the “grey bugs of death” on my plants and there was no saving them. Normally by this time of year we have dozens of ginormous ones and I’m desperately trying to use them all and of course, now that I don’t have any, I miss them. You know how it goes.

Never fear, I’m still making you zucchini things! Because I bet you have fresh ones from your yard. Or a coworker’s or a neighbor’s yard. Though hopefully they’re being given to you, and not that you’re digging around in other peoples’ yards…

The base of this recipe is my Basic Banana Muffins. You should really go check them out because they are my most favoritest muffins EVER. I make them at least once a month, sometimes more. I figured I already have such a great recipe, let’s just make it even better!

As much as I love the original, this updated version just might top it. The combination of zucchini and banana make these muffins amazingly moist. And the chocolate chips? Well…we all know chocolate chips make everything better. You could replace them with raisins or nuts, but I like my breakfast to taste like dessert.

If you have any zucchini hanging around you really should make these muffins. I promise they won’t disappoint!

Chocolate Chip Zucchini Banana Muffins

  • 3 ripe bananas
  • 1 c shredded zucchini
  • 1/3 c melted butter
  • 1 egg
  • 1 tsp vanilla
  • 1/2 c sugar
  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 c chocolate chips
  1. Mash bananas and sugar. Mix with zucchini.
  2. Add melted butter, egg and vanilla into banana/zucchini mixture. Stir until combined.
  3. In separate bowl, whisk together flour, soda, powder, cinnamon and salt.
  4. Add dry ingredients into wet. Stir just until combined, then mix in chocolate chips.
  5. Pour into greased or lined muffin tins.
  6. Bake at 375 for 15-18 minutes until golden brown.
