Chocolate Peanut Butter Pretzel Cookies

Chocolate. Peanut Butter. Pretzel. Cookies.

You read that right. Salty pretzels with sweet chocolate and creamy peanut butter. All jammed into a cookie together with their friend oatmeal. I struggled coming up with a name because there are so many good ingredients in these bad boys! But I figured “Oatmeal-Chocolate-Chip-Peanut-Butter-Pretzel-Cookies” sounded like a bit of a mouthful, so I tried to cut it down a smidge.

I made Brown Eyed Baker’s Malted Milk Chocolate Chip, Peanut & Pretzel Oatmeal Cookies (remember what I said about a mouthful?!) almost a year ago and whenever I ask what kind of cookies to make the BF says “make those ones with the pretzels again!” They were clearly a hit, so I figured I owed him some new pretzel cookies,  but wanted to switch things up.

I had already bought pretzels earlier this week, but somehow managed to buy honey mustard pretzels on accident. I h-a-t-e mustard. Pretty much any condiment really. Once at Sonic I ordered my sandwich without mustard. She responded “Oh it doesn’t come with mustard…it has honey mustard!” IF I SAID I DON’T WANT MUSTARD WHY WOULD I WANT HONEY MUSTARD! I digress. I had to go buy more pretzels.

I made these cookies with a chocolate chip cookie dough base, with a bit of oatmeal for texture and some peanut butter to keep them moist (and for that addicting peanut butter flavor of course). Then add in some crushed pretzels and chocolate chips…ta da! Excessively long named pretzel cookies.

I love recipes like this that don’t make a million dishes. I’m messy enough, I don’t need to dirty multiple bowls and utensils and so on just for some cookies. Give me a recipe that only needs a bowl for dry ingredients and my kitchen aid…and I’m bound to make it again. Is that a weird thing to judge a recipe on?

Be forewarned, you know those kinds of cookies where you eat one and instinctively reach for another? Then another jumps into you hand as you walk by? And you may or may not eat them for breakfast? Yeah…that’s this cookie. Don’t say I didn’t warn you! They won’t last long.

Chocolate Peanut Butter Pretzel Cookies

  • 1 1/4 c oats
  • 1 1/4 c flour
  • 1/2 tsp soda
  • 1/2 tsp powder
  • 1/4 tsp salt
  • 1/2 c butter (softened)
  • 1 c brown sugar
  • 1 c sugar
  • 2 eggs
  • 1/2 c peanut butter
  • 1 tbsp vanilla
  • 1 c chopped pretzels
  • 1 c chocolate chips
  1. Combine oats, flour, soda, powder and salt in bowl. Set aside.
  2. Cream butter and both sugars until fluffy. Add in eggs and beat until combined.
  3. Mix in peanut butter and vanilla.
  4. Slowly add in dry ingredients, scraping down sides as needed (this dough is thick).
  5. Stir in pretzels and chocolate chips by hand.
  6. Bake for 10-12 minutes at 325 or until edges start to brown.
  7. Let cool in and store in an airtight container.
