Limoncello Graham Cracker Bars

Long Distance Baking is so excited to be participating in the Spiked Recipe Challenge hosted by This Gal Cooks and Frugal Foodie Mama! Our first blogging challenge!

The challenge requires that our recipe must feature the beverage of choice and cannot be a drink. So what’s this beverage of choice, you ask? It’s Lemon Liquor!

Now, I’ve never had Lemon Liquor but I can tell you right now that my kitchen from this point forward will always be stocked with it simply because the bottle is so pretty. I mean come on, just look at it!

When we first signed up for the challenge we bounced around ideas about what to bake. Lemon bars? Lemon Coconut Cake? Lemon custard? There were so many options and so many new desserts to try to master in the kitchen that it took us a while to decide. I’m glad with the recipe we finally decided because they turned out to be quite the hit!

We made Limoncello Graham Craker Bars, a twist on classic lemon bars! The graham cracker crust sets this apart from the traditional flour based crust and the addition of Limoncello enhances the flavor! The filling has been adapted from Joy the Baker.

Ingredients
for the crust

  • 2 cups crushed graham crackers
  • 1 stick melted butter
  • 2 tbls brown sugar
  • 1 tbls granulated sugar
  • 2 tbls Limoncello

for the filling

  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/4 cup lemon fresh lemon juice (about 2 lemons)
  • 3 tbls flour
  • 2 tbls Limoncello

Directions

  1. Pre-heat oven to 350 degrees and generously grease an 8×8 pan.
  2. Pulse graham crackers in a blender or food processor until there is enough for 2 cups (about 1 1/2 packages).
  3. Mix together graham crackers, sugars, butter and liquor.
  4. Press into pan and bake for 10 minutes.
  5. While crust is baking, mix together eggs and sugar until well combined.
  6. Add flour, lemon juice and liquor.
  7. Remove crust from oven and pour filling over crust.
  8. Return to oven and bake 17-20 minutes or until the filling slightly jiggles.
  9. Let cool for at least one hour. Sprinkle with powdered sugar and cut into squares.
  10. Best enjoyed relaxing with a Huckleberry Spritzer!
