Happy World Nutella Day! It is incredibly random that we have a World Nutella Day. Seriously, who comes up with these kinds of days?? Not that I am complaining. As previously mentioned more than once, I am a Nutella addict. And if there is any day to indulge, today is that day.

The only annoyance in having World Nutella Day this week, is that I am actively trying to eat healthier. I just started taking a 9-week money management class offered by Dave Ramsey (check it out here!) and I am using this time to take control of my budget while simultaneously weed out my excessive coffee habit and limit my sugar intake. It’s going to be a challenging 9 weeks to say the least.

But how can I pass up World Nutella Day?!?! Fortunately for me, my coworkers love Nutella as much, if not more, than I do so I can literally bake these cookies and then give them away and not be tempted! Obviously I’ll need to eat one before I do that, however.

This past weekend I made chocolate chip cookies sans chocolate chips on a whim because I was craving something sweet (don’t judge, my limiting of sugar started on Monday). Seriously, they were quite possibly the best cookies I have ever made. Even my sister could not get over how delicious they were. It was one of those bizarre, fluke accidents in the kitchen where they magically turned out amazing. All I did was modify the back of a chocolate chip bag!

Those cookies have become the base for these cookies. Really, they are the cookie, I’ve just added Nutella! Seriously the easiest, quickest, and tastiest recipe! And if you aren’t a Nutella fan (it’s ok we can still be friends) just leave it out. Either way, you won’t be disappointed! Enjoy!

Ingredients:

  • 1 cup melted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 2 eggs
  • 2 tsp. vanilla
  • 2 heaping spoonfuls of Nutella

Directions:

  1. Pre-heat oven to 375 degrees.
  2. Add all ingredients into mixer, except Nutella, and mix until incorporated.
  3. Add Nutella. Do not over mix. Batter should have ribbons of Nutella throughout.
  4. Bake for 10-12 minutes. Let cool on wire rack and enjoy!
