Peach Mimosa

Guys…I’m cold. I know it’s not as cold here as that whole “Polar Vortex” thing back East I keep hearing about, but…I’m still cold. And I don’t remember the last time I saw the sun. Boise is in a valley and keeps getting these inversion things. It’s basically just low lying clouds…that stay for weeks, trapping the cold air. It will be cold and in the 30s down here in the valley, while up in the mountains it will be 40 and sunny! It’s just not fair.

Do you know what makes you warmer though? Drinking. And that’s what we’ve resorted to here. Ok I’m kind of kidding. We had high hopes for New Years Eve this year, with plenty of champagne to go around. That is until I ended up with a migraine and was fast asleep by about 10pm. I woke up feeling great though! So roomie and I decided to put the champagne to use and make mimosas. And that’s where this came from.

Please don’t judge me for having Andre champagne. I know, I know…it’s sooo not classy. It’s the cheapest stuff at the store ($5!) and reminds me of underage drinking days (Mom…I never drank before I was 21…please ignore that comment). But this was the bottle we had planned to take to the party! We definitely weren’t going to share our Prosecco! I also secretly enjoy it because it is just a screw top…and popping champagne corks scares me. I’ve only done it once and I was forced to. It was terrifying.

As un-sophisticated as this drink sounded, it was one of our favorites. Almost tastes like a Fuzzy Navel or a Bellini. I loved the peach and orange combo. Now, I’m not a big orange juice person and don’t generally have it around the house. What we’ve started doing is keeping a can of frozen orange juice concentrate in the freezer…and just taking a scoop out whenever we want a mimosa.

As you’ll notice…I prefer this ratio in a mimosa 😉 The recipe can easily be altered for whatever your preference may be.

Peach Mimosa

  • Peach Champagne
  • Frozen orange juice concentrate + small amount of water OR
  • Orange juice
  1. Add one spoonful of frozen orange juice concentrate into bottom of champagne glass. Mix small amount of warm water to liquefy orange juice (or simply pour orange juice into glass)
  2. Add desired amount of peach champagne
  3. Top with a peach slice and enjoy!
