We had a bag of Peanut M&Ms lying around so naturally I had to make cookies. Also, I didn’t want to devour the entire bag of M&Ms while watching Bachelor in Paradise. Because let’s be honest for a moment, that definitely would have happened.
cookies_3Speaking of Bachelor in Paradise, have you been watching?!? It’s definitely my guilty pleasure TV show right now. I watch the Bachelor/Bachelorette seasons but Bachelor in Paradise is so much better! All the drama and tears makes me feel a whole lot better about my own love life and that I haven’t quite reached that level of desperation…. yet. Ask me again in 5 years and we’ll see where I am at. In all honesty though, if Ben H or Ben Z are the next bachelor, I’m going to be slightly disappointed that I didn’t go to one of the casting calls.

If you follow me on Instagram, you would have seen that I made The Pioneer Woman’s Spicy Baked Beans (results coming this week!). To say I’m a Pioneer Woman fan would be an understatement… I want to marry a farmer and live on a ranch and cook all day too! Side note, one of my favorite books is The Dirty Life, a memoir about a city girl who marries a farmer and moves to the farm. Highly recommended!

Well, I’ve been eyeing The Pioneer Woman’s Browned Butter Chocolate Chip Cookies for a while so when I saw the M&M bag, I figured browned butter M&M cookies would be just as good! I only brown one stick of butter and that is just enough to give the cookies a carmel-y flavor. Plus, the smell of the browned butter infuses the entire kitchen and makes your house feel cozy and fall like. And, well, fall is the best time of year! If you need a cookie fix, these are for you. Enjoy 🙂

Ingredients:

  • 2 sticks of butter, 1 browned and 1 softened
  • 2/3 cup brown sugar
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 tbsp vanilla (yes, 1 whole tablespoon!)
  • 2 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup peanut M&Ms
  • 1 chocolate bar, chopped

Directions:

  1. Brown one stick of butter by melting the stick in a saucepan on low heat. It will bubble and foam and turn a carmel-y brown color. Remove from heat and cool for about 10 minutes.
  2. In a mixing bowl, combine the softened butter and both sugars. Slowly add the browned butter.
  3. Add the egg and vanilla and mix until incorporated.
  4. Add the flour, salt and baking soda. Once mixed, stir in the chocolate and M&Ms.
  5. Cover dough and let sit in the refrigerator for at least one hour. Don’t skip this step!
  6. Preheat the oven to 350 degrees. Scoop dough onto baking sheet and bake 10-12 minutes. Enjoy!

Now that we’re officially in our first Southern summer, I’m realizing you don’t actually do anything outside. The humidity hasn’t been terrible yet, but you do any sort of physical activity outdoors and you’re sweating. It’s disgusting. Needless to say I’m pretty excited we have a gym.

I’ve never been that great about eating those protein packed pre or post workout snacks. That is what you’re supposed to do, right? I don’t even know. I do know though that the fiancé always makes himself chocolate milk and I’m always jealous. Why does he have a tasty treat and I just pour myself water?!

That’s when I decided to combine a few of my favorite things (pb, bananas, and chocolate) into a delicious smoothie as a reward for actually going to the gym and not binge watching Season 3 of Orange Is The New Black.

Obviously I knew this was going to be good, this is one of my favorite flavor combinations, but I didn’t realize just how good it was going to be! I originally planned on sharing the smoothie, but then had to make a second because I slurped the first one down too quickly. And also because I’m a terrible sharer. But seriously! This is one of the best smoothies I’ve ever made. Not exaggerating.

It’s sweet enough it feels like a treat, yet healthy enough you don’t feel guilty drinking it after the gym. If you’re like me and love the peanut butter, banana, chocolate combo you’ve got to give this a try!

Chocolate Peanut Butter Banana Smoothie

  • 1 frozen banana
  • 2 tbsp peanut butter
  • 2 tbsp chocolate milk powder (I used Nesquick)
  • 1 c Blue Diamond Almond Milk
  1. Add all ingredients to blender and pulse until smooth

*Alternatively, use 1 fresh banana and a few ice cubes if you don’t have frozen bananas on hand

*I personally like to put the smoothie in the freezer for 10-15 minutes to make it more of a frozen slushy/milkshake consistency

I made Brown Eyed Baker’s Irish Car Bomb cupcakes a few years back and they were TO.DIE.FOR. But…they were pretty time consuming. I’ve been feeling awfully lazy in the kitchen lately, so I decided to forgo the Guinness and Bailey’s and just stick with the Jameson.

These cupcakes are rich: moist and oh so chocolatey with that extra added flavor from the whiskey. Any whiskey or bourbon would work, but I stuck with Jameson to keep with the Irish tradition.

What are your guys’ plans tonight? I’m not a huge St. Patty’s fan, but I’m sure we’ll end up celebrating in some way. Even if it’s just by eating these cupcakes.

Whiskey Chocolate Cupcakes (adapted from Sally’s Baking Addiction)

  • 1/2 c butter
  • 2 oz semi-sweet baking chocolate
  • 1/2 c cocoa powder
  • 3/4 c flour
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 c sugar
  • 1/4 c brown sugar
  • 2 tsp vanilla
  • 1/2 c buttermilk
  • 1/4 c whiskey (I used Jameson)
  1. Melt butter and chocolate in microwave safe bowl, stir until smooth. Set aside.
  2. In small bowl, combine cocoa powder, floud, soda, powder and salt. Set aside.
  3. In large mixing bowl, beat eggs, sugars and vanilla together until combined.
  4. Stir in the cooled chocolate mixture and the whiskey.
  5. Add half the flour mixture and stir, half the buttermilk and stir. Repeat, stirring just until combined.
  6. Pour into lined cupcake tins and bake 18-20 mins at 350, until toothpick inserted in the middle comes out clean.
  7. Let cool completely, then frost as desired.
