One of my all time favorite things about summer is the abundance of fresh fruit. And my favorite thing to do with said fruit? Cobblers, of course! Now, peach cobbler is my ultimate favorite. It’s quite possibly my favorite dessert in the history of ever.

I. Love. Peach. Cobbler. It’s the best. As much as I love chocolate, peach cobbler may just be my favorite dessert! Maybe it’s because I only get to eat it a few times each year, it seems more special.

When most people go camping they roast hot dogs or bbq. When we go camping…we eat things like frittatas, tamale pie, fresh biscuits and peach cobbler. Always peach cobbler. Let’s just say my dad is the dutch oven master! There is nothing better than sitting around the fire eating piping hot, fresh peach cobbler.

I don’t remember which came first; the dutch oven cobblers or the individual cobblers, but both are a stable in our house. I also don’t remember ever having these mini cobblers for dessert…they’re always breakfast! They are so quick and easy to put together, whenever we have a big group of friends over Dad will always whip up a bunch of different flavors and everyone picks their favorite. The ramikens make for great to-go cups for eating in the car too…just sayin

These are perfect mini desserts to take to a party or deliver to friends: A) they’re adorable because they’re miniature and B) they look time consuming, but they’re soooo easy! No one needs to know that though. Your secret is safe with me.

It’s also perfectly acceptable to make a batch and not share with anyone! The recipe makes 4, so I mean…if you’re eating one for breakfast and one for a snack and maybe one before bed….they’re really not going to last that long! Not that I know that from experience or anything… 😉 Enjoy!

Individual Peach Cobblers (adapted from Alton Brown)

  • 1 peach
  • 2 tbsp butter
  • 8 tsp brown sugar
  • 1 c flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/2 c buttermilk
  • 1/4 c sugar
  • 1 tbsp butter (melted)
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  1. Blanch peach, peel, and cut into 16 slices. Set aside.
  2. Place 4 ramikens on cookie sheet. Divide the 2 tbsp of butter evenly between them, then sprinkle 2 tsp of brown sugar into each.
  3. Arrange four slices of peaches into ramikens.
  4. In separate bowl, mix flour, baking powder, soda, cinnamon and salt. Set aside.
  5. Mix sugar, buttermilk, vanilla and melted butter until combined. Fold in dry ingredients.
  6. Pour batter evenly into ramikens. Sprinkle with brown sugar.
  7. Bake 20-25 minutes at 350, or until golden brown.
