This weekend was a windows open, music up, it’s-beginning-to-feel-a-lot-like-spring-time weekend. To me…those kind of weekends require cookies. Sometimes you want an easy recipe, one that doesn’t require a lot of time or energy. Or much thinking. Or dishes. These are the cookies for that time.

Well, the holidays are officially over. And I’m pretty upset about it. We didn’t get a white Christmas (yet drove 6 hours through the snow…), I had to defrost my car from freezing rain yesterday, and to make matters worse? No more holiday Starbucks cups.

The one bright spot that came this weekend was some fresh home-grown lemons from my boyfriend’s parent’s house in California. I haven’t seen the sun in days, but these sunny yellow lemons had me instantly thinking of summer.

He brought back so many lemons I just knew we needed to bake with them, but I’m also kind of all sugared out from the holidays. I decided to go with a lemon butter cookie recipe from A Teaspoon of Happiness for that reason. I find that butter cookies are the perfect mix between a shortbread and a sugar cookie; they’re sweet enough to still feel like dessert but not overwhelmingly sugary.

Now normally I don’t love shortbread and butter cookies for that reason, because they’re not sweet enough for my massive sweet tooth. But that’s where the lemon comes in. The tartness blends perfectly with butter and you’re left with a refreshing lemony tang.

If you need a bright burst of sunshine to get rid of the winter blues, you should whip up a batch of these lemon butter cookies. And then eat five in one sitting. Because that’s what I did.

Lemon Butter Cookies (adapted from A Teaspoon of Happiness)

  • 2 1/2 c flour
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1 cup unsalted butter, softened
  • 1/3 c granulated sugar
  • 1/3 c brown sugar
  • 1 tbsp vanilla
  • 1 large egg
  • 2 tsp lemon zest
  • 1 tbsp lemon juice
  • Powdered sugar, for dusting
  1. In medium bowl combine flour, salt and soda. Set aside.
  2. Cream butter and sugars until fluffy. Mix in vanilla and egg.
  3. Stir in lemon zest and juice.
  4. Gradually add in dry ingredients and stir until combined.
  5. Roll into teaspoon sized balls, then flatten with tines of a fork.
  6. Bake for 12-15 minutes at 350 degrees, removing when just beginning to brown.
  7. Sprinkle with powdered sugar while still warm, then transfer to wire rack to cool.

Did you have so many trick-or-treaters you ran out? Did you take the extras to work or share with someone else? Maybe the candy was tempting you, so you threw it away. Or are you like me and it’s still sitting in a bowl, just staring at you.

Oddly enough I’m not a huge candy person. Yes I did pick out all of the Reese’s before any children got any and yes there is a handful of snickers in my purse. But that’s beside the point. Every year I try to be “good” and not eat all the leftover candy, and the majority of it sits around until it goes bad. Or until we set it out at a Christmas party for unsuspecting guests…

These cookies are the perfect way to get rid of some of that extra candy. Who can say no to a cookie?! Candy alone: meh. Candy inside a cookie: YES!

This would work great after Easter, Christmas, with Valentine’s Day chocolate…any time you have a handful of chocolate candies. I used a combination of Kit-Kat, Hersey’s, Snickers and Whoppers just because that’s what I had, but you could use any kind.

The recipe is a spin-off of Kelly’s M&M Cookies and is super quick to whip up. The soft cookie with the crunch of the candy is a perfect combination. They won’t last long though! You better hide some extras for yourself in a cupboard before they all disappear.

Chocolate Candy Cookies

  • 2 sticks butter
  • 1/2 cup sugar
  • 3/4 cup light brown sugar
  • 3/4 cup dark brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 3/4 cups flour
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp salt
  • 1c chopped candy pieces
  1. In large mixing bowl, mix butter and sugars until creamy. Add eggs one at a time. Add vanilla.
  2. In separate bowl, combine flour, baking soda, baking powder and salt. Add flour mixture to bowl in increments.
  3. Stir in candy pieces.
  4. Scoop dough into balls and place on cookie sheet about 2 inches apart.
  5. Bake ~10 minutes at 375 degrees until golden brown.

013Guys, I met Brekin Meyer last night. Like actually met him as in shook his hand and talked to him. I didn’t think I would be so excited but after my friend almost ran him over in the parking garage of the movie theater, I was so excited that it was actually him. And that’s not all, I sat right behind Jason Statham and his girlfriend during the movie. I literally sat right behind him as in I could have reached out and touched his head. And turns out his model girlfriend eats milk duds… so if a model is eating candy, I don’t feel so bad that I just ate two mini snickers 🙂

Anyway, back to the real world and these cookies. We just recently celebrated our 1 year blogiversary and it got me all sentimental about our very first post. It’s the one about my life long quest to find the perfect chocolate chip cookie recipe and I realized, I’ve been slacking on that quest. So today, it’s back to business which is why I present you with these- Chocolate Chip Cookies: The Bakery Style. (If you’d like to revisit all of the experimental chocolate chip cookie recipes, here’s the classic, the decadent, and the loaded.)

In full disclosure, I originally planned to make Chocolate Chip Cookies: The Nutty but chickened out at the last moment. We are not a fan of nuts in our cookies in my family and the look from my sister when I took chopped walnuts out of the grocery bag was one of true terror. So I caved and omitted the nuts. Maybe next time…

What I love about these cookies is that they taste like they were bought from a bakery! And maybe that’s because it’s adapted from Love From the Oven’s copycat recipe for Levain Bakery’s famous chocolate chip walnut cookies. Although I’ve never had a Levain cookie, if they taste anything like these, I’ll definitely eat a few 🙂 Hope you enjoy!

Ingredients:

  • 2 sticks butter
  • 1/2 cup sugar
  • 3/4 cup light brown sugar
  • 3/4 cup dark brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 small box vanilla pudding
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 cup chocolate chips
  • 1 4oz. bar chocolate, chopped (any kind of chocolate you prefer)

Directions:

  1. Pre-heat oven to 375 degrees.
  2. In large mixing bowl, mix butter and sugars until creamy. Add eggs one at a time. Add vanilla.
  3. In separate bowl, combine flour, pudding mix, baking soda and baking powder. Add flour mixture to bowl in increments.
  4. Stir in chocolate chips and chocolate.
  5. Scoop dough into balls and place on cookie sheet. I used a large cookie scoop and spaced it out to where I could only fit 6 dough balls on a sheet at one time.
  6. Bake 12-14 minutes. (More or less depending on size of cookies.)
  7. Let cool, or don’t, and enjoy!
