Before we get to these tasty treats, I want to apologize for the radio silence here on the blog recently (even my dad has noticed. Hi, Dad!) We are both still here…just busy with life! There are still plenty of delicious desserts we plan on sharing with you, but there may be longer gaps between posts. If you stick around though, we promise they will be worth the wait.
Now back to these breakfast bars. Breakfast may be my favorite meal of the day: fluffy scrambled eggs, crispy diner style hash browns, crunchy bacon and a hot cup of coffee. It doesn’t get better than that! Sadly though…my usual breakfast routine is shoveling a bowl full of oatmeal in my mouth as fast as humanly possible. But hey…at least I’ve graduated from eating in my car!
While I guess technically these are pretty much a dessert, they have fruit, oatmeal, and very little added sugar. In my mind, that’s enough to consider them acceptable for breakfast. Flahavan’s Irish Oats are a source of whole grains and we all know how good whole grains are for you. Studies have repeatedly shown that they are able to reduce your risk of stroke, heart disease, and type 2 diabetes. Sign me up!
Growing up my mom always used to make strawberry rhubarb pie…but it was never my favorite (sorry, Mom!) I think it’s one of those things you have to acquire a taste for? Maybe? Or maybe these days I’m just a less picky eater because now I love the combination. Juicy strawberries fresh from the farmers market and homegrown rhubarb are the epitome of early summer. Plus they’re just so pretty together!
I’ll let you be the judge of whether these bars are a breakfast or dessert. Either way, I’m sure you’re going to love them.

Do you ever struggle deciding what to bring to a party or potluck? My instinct says to bring dessert, but you know there are always plenty of sweets. You could bring chips and dip, but again, there’s bound to be at least one variation of 7-Layer Bean dip already there.
It’s nice when someone brings something healthy, just to balance out all the other junk food, but veggie trays can be so boring. You don’t want to be that person who shows up to the party with a sad assortment of grocery store vegetables.
That’s where this fruit dip comes in. A fruit platter is a nice option on its own, but again, somewhat boring. Pair the fruit with this yogurt dip though? People won’t be able to stop talking about it.
It takes only 5 minutes to put together, so it comes in handy when you simply don’t have time for anything else. Combine all the ingredients, let sit in the refrigerator for 30 minutes, and you’re ready to go!
The greek yogurt provides the base and the addition of cool whip makes the whole thing fluffy and light. I stuck with the original vanilla pudding, but you could easily swap it for another flavor. Lemon perhaps? I love recipes like this where you can adjust the ingredients and amounts to your taste.
This recipe makes a party size portion, so if it is just for you or a smaller group feel free to halve it for a more manageable amount. Though you could just eat the leftovers with a spoon. I’d be lying if I said I didn’t do that.
Add this to your group appetizer repertoire. You will be glad you did!

I have a few confessions to make. First: this is not a Waldorf salad.
But that’s what we call it! I did research and tried to find out what this salad’s real name would be, but no luck. So I’m sticking with the name Waldorf. Sorry for the confusion.
A true Waldorf salad has a mayonnaise sauce and vegetables. This on the other hand, borders on dessert and uses whipped cream. Because mayo is disgusting (insert judgy emoticon face here).
This salad starts out looking healthy, with tons of fruit like apples, bananas, oranges and grapes. Then you add the mini marshmallows and whipped cream and things start getting even better.
My second confession is that I could eat an entire bowl of this. In one sitting. All by myself. Luckily we always make this for Thanksgiving so I’m forced to share. I could tell you I didn’t take bites in between photos, but that would be a lie.
This salad is perfect for potlucks or if you need another quick Thanksgiving side dish. It can also be easily adapted to different tastes. For example my sister went through an anti-banana phase, so we omitted those for a few years. Make this your own!

Fruit and Walnut Salad (Waldorf Salad)
2 tart apples, diced
2 bananas, peeled and sliced
1 can (11 oz) mandarin oranges
1 c halved grapes
1 c mini marshmallows
1/2 c walnuts
1-2 c whipped cream (enough to cover)
orange or lemon juice (or juice from mandarin oranges)
Toss apples and bananas in orange or lemon juice to prevent browning.
Combine all ingredients in large bowl and stir to combine. Adjust amounts of ingredients to taste.
