It’s obvious we have an ice cream obsession around here, but sometimes you want to beat the summer heat and not feel guilty about indulging. Or maybe you’re doing the Whole30 like us and can’t have sugar. Or maybe you just want a healthy summer treat for the kiddos. Whatever your reasoning, these popsicles are just what you need.
You know when you buy too much watermelon and by the end the last pieces start looking a little sad? Maybe that’s just me but I’m very picky about my watermelon (and bananas. I have issues, I know). I took that watermelon, a handful of strawberries and a squeeze of some fresh lime juice, and these popsicles were born.
They’re not overly sweet (because hello, no sugar) but they are tart and refreshing and pair perfectly with a good book and a pool day.
All that stands between you and these healthy easy popsicles are about 5 minutes and 3 ingredients. So get going!

Strawberry Watermelon Popsicles
2 cups cubed watermelon
1 cup halved strawberries
Juice of 1 lime
Optional: zest from 1 lime and additional strawberry slices
Place all ingredients together in blender and pulse until smooth.
Pour into Popsicle mold.
If desired, add additional thin slices of strawberries and lime zest into the molds
