Easter Blondies

I dropped the ball on posting recipes in advance for Christmas. And Valentine’s Day. And even St. Patrick’s Day. But I will not be behind for Easter. Thus, I bring you Easter Blondies. A good few weeks before Easter. You’re welcome 🙂

I love Easter. I love the meaning of Easter and why we celebrate the day. And I love that Easter was always a family day and a chance to visit and spend time with aunts, uncles and cousins. Growing up, my family used to celebrate mine and Kara’s birthday because our birthday is on April 18 and Easter was the closest holiday when the family would get together. My mom is 1 of 8 kids so anytime the family got together, anytime we still get together, it’s always a fun and enjoyable occasion.

My first Easter living in LA I spent Easter with two of my sorority sisters (who also happen to be biological sisters) and their family. It was so fun! I thought I had a big family but my family is minute compared to theirs. And I have never eaten more in my entire life. I’m not kidding. I swear I ate my weight in food that day and then some. It was like one continuous day of eating and visiting and eating some more. I’m still close with my sorority sisters and it was nice to be part of their family for a day since I was far away from mine.

It just so happens that this Easter, Stephanie and I will be on our Portland Trip. We probably won’t be baking for Easter, but we will definitely eat plenty of desserts and baked goods to make up for it. Hope you enjoy these blondies with your family on Easter 🙂

Ingredients:

  • 2 sticks butter
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • Easter M&M’s

Directions:

  • Pre-heat oven to 350 degrees
  • Mix butter and brown sugar. Add eggs and vanilla.
  • Mix in flour and baking soda.
  • Stir in M&M’s (as many as you desire).
  • Pour in 9×13 baking pan. Bake about 16-20 minutes or until golden brown. Enjoy!
