There’s a new ice cream shop in Sacramento called Cornflower Creamery and it’s about two blocks from my work. Guys, this is a dangerous thing. I may or may not have gone there and just ate ice cream for lunch one day… it was so worth it! (This is also why I have signed up for a boxing gym so when I get the urge to eat ice cream for lunch again, because it most definitely will happen, I won’t feel guilty about it!)

You would do the same too if you’ve tried their Strawberries & Cream flavor. It is AMAZING!

I don’t think I’ve ever ordered strawberry flavored ice cream before Cornflower Creamery. I was one of those people who, when presented with a neopolitan ice cream sandwich, would eat the chocolate and vanilla portions and leave the strawberry portion. I just wasn’t into it.

This ice cream definitely changed my mind and I had to recreate it at home. If you follow our blog regularly, you’ll have noticed I try a lot of Joy the Baker’s recipes. Her blog is awesome and her recipes delicious! This Buttermilk Ice Cream was no exception! I made a few tweaks to the original recipe and omitted the bourbon (even though I do enjoy drinking it)!

The best thing about this recipe is that it is fool proof. Honestly, this is the easiest ice cream recipe I’ve ever used! So go, go make this now! You won’t be disappointed!

Ingredients:

  • 1 3/4 cup heavy cream
  • 1/2 cup sugar
  • 1 tbsp. vanilla
  • 1 1/4 cup buttermilk
  • sliced strawberries

Directions:

  1. In a saucepan over medium heat, combine cream, sugar, and vanilla until sugar is dissolved.
  2. Remove from heat and add sliced strawberries. Refrigerate overnight. (I refrigerated the mixture for two nights)
  3. Add the buttermilk and stir until combined. Churn ice cream according to manufacturers directions.
  4. Place in freezer-safe container and freeze until firm.
  5. Enjoy! We topped ours with more sliced strawberries and a chocolate sauce drizzle!

strawberry spritzerAs I mentioned in my last post, Chocolate Chocolate Chunk Muffins, I spent last week relaxing with my family at the beach house we rent every year in Aptos, California where we ate and drank more than usual. At least I did and that’s because my cousin made the most delicious strawberry drink I have ever had (and one that I’m calling The Beach House because I really have no  idea if it has a name and this just seemed fitting!) I’m being serious, it was DELICIOUS!

I’m not a huge drinker and usually I am content just sipping a beer. I pretty much sip every drink- it takes me forever to finish any sort of beverage unless it’s a milkshake. That I can finish in minutes! This drink, however, I feel like I could drink buckets full. The best part is that it is so simple to make and you can make it with or without alcohol and it’s just as good! Well, for some, maybe not just as good 😉

The two most important keys to this drink is that you need really good lemonade (Simply Lemonade is my favorite!) and fresh strawberries. Frozen strawberries will work just as well but in the summer, it’s all about fresh strawberries! There are also no measurements with this drink. If you want more lemonade flavor, add more lemonade. Need more strawberry, crush a few more! Go make this now, I promise you won’t regret it!

  • Lemonade
  • Club Soda
  • Crushed Strawberries
  • Vodka (optional)

Directions:

  1. Crush strawberries in the bottom of glass.
  2. Fill half the glass with lemonade, a quarter with club soda and about a shot of Vodka.
  3. Stir and pour over glass filled with ice. Enjoy!

*This recipe does not have measurements because it easily adapted to taste preference. Play around with ratios a bit and you’ll find a combination you love!

This was my summer project as a kid. My parents decided since I was the one eating all the jam that I needed to be the one making it (My sister had to do the pickles for the same reason).  Somehow, though, I had forgotten about making freezer jam until recently. I usually snag a jar or two when I visit my parents, but I guess lately I’ve been flying and haven’t taken any food, cause I was all out of strawberry jam!

Since I’m a spoiled brat and won’t eat store-bought jam, it was time to make my own. Throughout the past few months I’ve been cutting and freezing strawberries as they were on sale, so I already had plenty to use. Fresh or frozen works fine for this recipe! I like a lot of big berry pieces, so I just use a potato masher. You could use a food processor, just don’t turn it into a strawberry puree. You want it chunky!

Now, let’s talk about pectin. I used Sure-Jell. I would imagine you could use any kind of powdered pectin with this recipe, but I don’t know that for a fact. Any one else know?? If for some reason you can’t find Sure-Jell or want to use a different powdered pectin they all come with freezer jam recipes on them…just follow those! Don’t use that an excuse for not jamming this summer 🙂

Last but not least, should we address the elephant in the room? The four cups of sugar in this recipe?? Please don’t freak out. It’s ok, I promise. I mean, do we even want to know what is in the store-bought kind? At least you know exactly what is in this homemade jam: “a few strawberries and a whole lotta sugar”. Thank you Dad, for that enlightening tip when I asked for the recipe 😉

But really. Go make this jam! It’s the.best.jam.EVER. I eat this with a spoon. I would drink it with a straw if the chunks of strawberries didn’t get in the way. Have I convinced you yet? You’ll be feeling all Little House on the Prairie in no time!

Strawberry Freezer Jam (recipe from Sure-Jell Pectin packet)

  • 4 c diced strawberries
  • 4 c sugar
  • 3/4 c water
  • 1 pack Sure-Jell pectin
  1. In large bowl, stir sugar into berries. Let stand 10 minutes.
  2. In a small sauce pan, whisk pectin into water until dissolved. Bring to a boil.
  3. Boil for 1 minute, stirring constantly.
  4. Pour into strawberries and continue to stir for 3 minutes, until mixture is no longer grainy.
  5. Ladle into freezer safe containers (makes ~5 cups). Let sit on counter for 24 hours with lids on.
  6. If using immediately, put in refrigerator. Otherwise keep in freezer for up to 1 year.
