White Chocolate Macadamia Nut Cookies
As part of being an ultrasound technologist, sometimes we have to be “on call”. Usually this ends up being about once a week or so. If someone comes into the emergency department and needs an ultrasound, the doctors call us and we come in from home. Sometimes you sleep through the night and never get a call. Other times…you’re not so lucky. Enter these cookies:
We have a Subway in our hospital. That is open some very long hours. The smells always taunt me! My stomach tries to tell me I need a big ‘ol sandwich at midnight, but my brain tells me no. After walking past the Subway time and time again however…my will power weakens. Come 3 am and I’ve barely slept? That will power is non-existent.
It’s really quite easy to convince yourself you need a cookie in the middle of the night. You should try it sometime! Or just take my word for it. And by “cookie” I definitely mean “cookies”. They sell them by threes! I kind of had to.
I was feeling considerate (or delirious) so I left one cookie out for my boyfriend to have the next day. Lo and behold, he tells me white chocolate macadamia nut are his FAVORITE cookies. WHAT?! We’ve been dating 7 years. I never knew that and definitely never ever made these cookies… #bestgirlfriendaward
Obviously this situation needed to be remedied and I needed cookies that matched the deliciousness of 3am Subway cookies. So here we are! With the classic and timeless white chocolate macadamia nut cookie. I feel like these are never a go-to cookie in anyones household, but they’re SO good! They really should be. Clearly I need to be making them more often in mine…
Someone please tell me there was an important fact they never knew about their significant other until wayyy past the acceptable time? It will make me feel better about having a baking blog and not even knowing what kind of cookies I should be regularly baking! 😉

(adapted from Pillsbury)
- 1 1/2 c flour
- 1 tsp soda
- 1/2 tsp salt
- 1 c brown sugar
- 1/2 c sugar
- 1 c shortening
- 1 egg
- 1 tbsp vanilla
- 1 c white chocolate chips
- 1/2 c chopped macadamia nuts
- Mix together flour, soda and salt. Set aside.
- Cream sugars and shortening. Mix in egg and vanilla until combined.
- Slowly add dry ingredients.
- Stir in white chocolate chips and macadamia nuts by hand.
- Drop by rounded teaspoonfuls on baking sheet.
- Bake at 375 for 9-10 minutes, until just turning golden brown.
- Store in airtight container once completely cooled.
