Unfortunately the storms don’t do anything to cool off the temperature though, so we’ve been spending a lot of time indoors. And what better to do when stuck inside than bake!

There’s something almost soothing about baking bread. Baking with yeast and dealing with dough rising used to stress me out a bit. But really, there’s nothing to it! Also it helps that things rise super quick in this warm humidity.

Whenever I want to try a new bread recipe I always go to Girl Versus Dough. Her recipes never fail me! This honey oat bread is soft and sweet pretty much irresistible. My new coworkers were giving me funny looks as I kept pulling out individual slices of bread from my lunch box…but it was that good!

Whole Wheat Honey Oat Bread (recipe from Girl Versus Dough)

  • 1 c water
  • 1 c milk
  • 1 packet active dry yeast
  • 3 tbsp honey
  • 2 1/2 c whole wheat flour
  • 2 c all purpose flour
  • 1 cup rolled oats + more for topping
  • 1 tbsp salt
  • 1/2 c butter, melted
  1. Heat water and milk in the microwave until warm (not hot), about 30 seconds.
  2. Add yeast and honey to mixture. Let sit 10 minutes
  3. In mixing bowl combine flours, 1 cup of oats and salt. Add butter and yeast mixture.
  4. Using a dough hook, knead until dough is slightly sticky, smooth and elastic, about 5-6 minutes. Cover with tea towel and let rise for one hour or until doubled in size.
  5. Punch dough down and move to a floured surface. Shape dough into loaf size, then place in a greased 9×5 loaf pan. Sprinkle with oats, lightly pressing them into dough. Cover and let rise another 30-45 minutes.
  6. Bake 40-50 minutes at 400 degrees, until loaf is evenly browned. Remove from pan and let cool on wire rack.

Think about it, when was the last time you really stepped away from your desk, turned off your phone, ignored your email and just enjoyed a mini break? I say it’s time we change that! So thank you, Chobani, for introducing the #BreakYouMake. America, let’s take more breaks!

Chobani is challenging everybody to nominate a person in their life for #BreakYouMake Day (which was Wednesday, June 3). You mean, we can’t chose ourselves?! Just kidding…. I think everyone deserves a break when they need one but the one person that immediately comes to mind: my mom <3 Brace yourselves, it’s gonna get sappy…

Bunny
Hi, guys! This is my mom Bunny. Yes, we call her Bunny. Her birth name is Ellen but around family and friends (even all my friends) she has always been Bunny. In fact, my cousin and I have decided that our children will one day call her G-Bunny aka Grandma Bunny.

Anyway, enough about her name. Here is why I nominate my mom for #BreakYouMake:

  • She is an elementary school teacher and works incredibly hard for her students. She will show up early, skip her lunch or even stay late to help her students. She deals with difficult parents who believe their child is as perfect as Jesus and can do no wrong, when in fact, they most certainly are not perfect. She’s focused and determined and an all-around awesome teacher! Yes, I am biased but I’m 100% right about this.
  • She is always looking out for her children and wanting to do nice things for us. Just last night she called me to tell me there was a sale on a Fiestaware knife set and she bought it for me because I collect Fiestaware. I love the brightly colored dishes!
  • She is immensely supportive. Except when I wanted to get a tattoo for  my 24th birthday in Portland, which I ended up not doing and still haven’t done…
  • She is super cool! People always say I remind them of my mom or that I look like her or that I sound like and that is the biggest compliment ever!!PicMonkey Collage

So, thank you mom for being so awesome! I love you and I hope you enjoy your well deserved break! Now I am going to take one and eat a delicious Chobani Flip… I just need to decide what flavor!

My grandmother once told me that ice cream “is just milk, cream, and sugar- it’s really not that bad for you, Kelly.” I chose to believe her and as a result, I liberally consume ice cream on a regular basis. Thanks, Mimi, for justifying my love of ice cream.

Now, I can’t entirely blame my grandmother for my love of ice cream. I also blame our local, go-to ice cream shop- Leatherby’s. Hands down, they have the best ice cream around the Sacramento area (although, nothing beats Mint Chip from Baskin Robbins in my opinion)! I guess I should clarify, Leatherby’s has the best Toasted Almond ice cream around. Seriously, the best!

That is, however, until I attempted to make it at home using Blue Diamond Dark Chocolate and Sea Salt Almonds. Watch out Leatherby’s, I’m giving you a run for your money!

This month we received some awesome goodies from Blue Diamond and when I saw these almonds were included, I knew exactly what I was going to make. Toasted Almond ice cream seemed like a no-brainer! These almonds are not only perfect for this ice cream and so many other yummy goodies, but I saved a handful to snack on at work this week! Come on, what’s not to like about dark chocolate covered almonds!?!

This ice cream is super simple to make- it only takes 5 minutes! The longest part is the churning and freeze time. I adapted this recipe from David Lebovitz’s Vanilla Ice Cream and what I love about it is that there is no egg tempering happening here- the base really is just milk, cream and sugar! Mimi was right! And although it may not be considered healthy by some (if this is you, please let me continue to believe it’s really not that bad for me), it sure is easy to make! Hope you enjoy 🙂

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 4 tbsp vanilla extract
  • 2 tsp almond extract
  • About 1/2 cup each of Blue Diamond Dark Chocolate and Sea Salt Almonds, chopped (more if desired)

Directions:

  • In medium saucepan, heat 1 cup cream and the sugar, stirring continually until the sugar is dissolved.
  • Remove from heat and add remaining cream, milk, vanilla and almond extract.
  • Cover and refrigerate until chilled.
  • Churn ice cream according to ice cream maker directions. In the last 3-5 minutes, add the chopped almonds.
  • Freeze and enjoy!
