If you follow me on Instagram, you’ll know that I am baking a wedding cake for my friend’s wedding this Saturday. You will have also noticed that I hosted my cousin’s bridal shower this past weekend! It was so much fun planning and preparing with my mom and aunts that I thought I would share some pics on the blog!

The theme was “Stock the Kitchen” and one of the things I asked guests to do was submit a recipe so I could make a cookbook for Lis and her fiancé- their first family cookbook! My aunt brought some beautiful linens to use and different glass jars that we filled with fresh flowers. Another aunt make these centerpieces out of mini colanders. They were perfect for the theme and were so pretty!!

We had a mimosa bar and for those who opted out of alcohol, we had lemonade or water. Lunch was catered but two of my aunts each made delicious salads. It was truly a family affair and now we’re so excited for the big day!!

I actually never even knew what their name was. I’ve seen them at various parties and cookie swaps over the years, and I always eat them, but I never knew what they were. Guess I was too busy shoveling them in my face to worry about it.

For the layers you start with a graham cracker crust, topped with nuts, all the best baking chips and coconut, and then a can of sweetened condensed milk is poured over the top to bring it all together. It’s a cavity waiting to happen.

1: graham crackers
2: chopped nuts (pecans are my fav)
3: chocolate chips (any kind)
4: butterscotch chips
5: white chocolate chips
6: shredded coconut
7: sweetened condensed milk

There you go. 7 layers of sugary heaven. Make sure you have a glass of milk on hand, because you’re going to need it. They are a sweet and sticky mess and a hit with everyone. I was so excited to see how quick and easy they really are to make, too. It’s always necessary to have those recipes on hand for last minute get togethers, and it seems like I’ve been having a lot of those lately!

Today is my last day of work in Boise and I leave Friday with my mom to start the trek back down to Louisiana. Eek! If posting slows down a little bit for the next couple weeks it’s just because I’m trying to adjust to life in the Bayou. Wish me luck! Seven Layer Bars | longdistancebaking.com

Seven Layer Bars (adapted from Eagle Brand)

  • 1 1/2 c graham cracker crumbs (about 1 pack)
  • 1/2 c butter, melted
  • 1 c chopped pecans
  • 1 c chocolate chips
  • 1 c butterscotch chips
  • 1/2 c white chocolate chips
  • 1 1/2 c shredded coconut
  • 1 14oz can sweetened condensed milk
  1. Line a 9×13 pan with parchment paper, letting it hang over the edges for easy lifting once cooled.
  2. Combine graham cracker crumbs and butter with hands, then press evenly into bottom of pan.
  3. Spread the pecans over the entire graham cracker crust, followed by the chocolate chips, butterscotch chips, white chocolate chips and shredded coconut.
  4. Pour the sweetened condensed milk evenly over the entire pan.
  5. Bake at 350 for 20-25 minutes, until the coconut begins to turn golden brown.
  6. Let cool. Remove the bars from the pan using the parchment paper edges as handles. Cut into indivicual pieces.

IMG_3611Guys, I’m on a health kick. Yes, I know I say that often on here but when you have a blog that is dedicated to baked goods and desserts, health kicks are needed to keep yourself in check. At least they are for me.

For this health kick (which in full disclosure, I just ate a Skinny Cow ice cream sandwich before I wrote this so I feel like I’m still doing semi-well…) I bring you farro salad. If you have not had it before, make it tonight for dinner because it’s that good!

Farro, which is very similar to barley or spelt, is so yummy! When I first started my job, the office was on a health kick (guess I fit right in!) and one day we had lunch catered and there was farro salad. I ate 3 helpings and I’m not even embarrassed by it. It was so tasty!

Using my memory of that work salad and a recipe I found online, I created my own version of a farro salad. It did not disappoint! And the best thing is that you can add what you want and no measurements are needed! I made this salad according to what I liked and eyeballed how much to add. This salad is best made, however, either the day before of a few hours before serving so it can chill in the fridge and all the flavors can meld together. Hope you enjoy!

Ingredients:

  • Farro (cooked according to package)
  • shredded brussel sprouts (Trader Joe’s sells this by the bag)
  • dried cranberries
  • candied walnuts
  • Feta cheese

Directions:

  1. Mix all ingredients in large bowl. Add desired dressing and let sit in refrigerator.

For dressing: Combine olive oil, splash of rice wine vinegar, salt, pepper, garlic, and small spoon of dijon mustard. Mix well and pour over salad.

My roommate and I just celebrated our 5 year anniversary (awwww!). It’s true, somehow we survived 5 years under the same roof without killing each other. For two twenty-something year old girls? That’s a cause for celebration. I know other people make Better Than Sex
