Who here loves brie? (raises hand enthusiastically). Let’s be honest though, I love pretty much every kind of cheese and I will use any excuse to eat it. I recently ordered a grilled cheese sandwich for lunch with a side of mac and cheese. That’s the kind of cheese connoisseur you’re dealing with over here.

I told myself I had to make them because they looked so good. It may have taken me a year, but I made them! And let me tell you, they tasted just as good as they looked.

Cranberry Brie Puff Pastry Bites - a Thanksgiving or Christmas holiday appetizer | longdistancebaking.comStarting with the store-bought puff pasty dough as a base, a dollop of fresh cranberry sauce and a little cube of brie are added, followed by another layer of puff pastry dough, almost making little mini pies. These are then baked and puff up into golden and delicious holiday bites. The contrasting flavors between the rich creamy brie with the tart tangy cranberries is a match made in heaven.

Even better, they can be made beforehand and kept frozen until needed. These are the perfect holiday party appetizer and they look so festive too! The only downside is that everyone else will be so in love with them, you’re going to have to fight for the last one.

Cranberry Brie Bites (recipe from Well Plated)

  • 1 c fresh cranberries
  • 3 tbsp orange juice
  • 2 tbsp water
  • 1 tbsp honey
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 2 10×10 inch sheets puff pastry, thawed in refrigerator
  • 1 egg
  • 4 oz Brie cheese
  1. In small saucepan, combine cranberries, orange juice, water, honey, cinnamon and salt. Bring to a simmer over medium heat and cook for 10 minutes, until cranberries break down and thicken.
  2. Unroll the thawed puff pastry onto a floured surface. *optional* roll dough a little more thin in order to make more bites*
  3. Using a biscuit cutter or small cookie cutter, cut circles out of pastry dough keeping circles as close together as possible.
  4. Beat the egg and brush each pastry with it. Top half the pastry rounds with 1/4 tsp cranberries and a small cube of Brie.
  5. Place the remaining pastry rounds egg side down on top of the cranberries and brie. Pinch the edges of the top and bottom pastries closed using the tines of a fork. Poke the top of each pastry to allow heat to escape.
  6. Place the bites on parchment lined baking sheets. (if making ahead, place in freezer at this point). Brush top of bites with remaining egg.
  7. Bake for 12-15 minutes at 375, until tops are golden brown. Let cool before eating.

For the past few months, my fiancé Matt has been asking me to make “black and white cookies, you know…like at the grocery store!” With a description like that, I know you’ll be surprised to hear I had no idea what he was talking about.

I’m going to preface by saying that I have never had German Chocolate Cake so I can’t say how much these taste like an actual German Chocolate Cake but I can say they are delicious!

And super easy to make too!

It’s no secret how  much I love coconut! And chocolate! So when my cousin sent me a link to make these for Thanksgiving a few weeks ago, it didn’t take much convincing.

The best part about these cookies was the chocolate cookie base. I could eat these chocolate cookies all day! Hope you enjoy!

This recipe is slightly adapted from A Dash of Sanity.

Ingredients:

for the cookies

  • 2 sticks butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 tsp vanilla
  • 2 eggs, beaten
  • 2 1/4 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • pinch of salt

for the frosting

  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 egg yolks
  • 1/2 cup butter
  • 1 tsp vanilla
  • 1 1/3 cup shredded coconut
  • 1/4 cup chocolate chips

Directions:

  1. Preheat oven to 375 degrees.
  2. In mixer, mix together butter, sugars, vanilla and eggs.
  3. In separate bowl, combine flour, cocoa powder, baking soda and salt. Gradually add to the butter mixture until dough forms.
  4. Using a tablespoon, form dough into a ball and place on baking sheet 1 inch apart.
  5. Bake for 10-12 minutes and let cool.
  6. In saucepan, combine evaporated milk, sugar, egg yolks, butter and vanilla. Constantly stir over medium heat until it thickens. This takes about 11 minutes so be patient!
  7. Remove from heat and stir in chocolate until melted.
  8. Spread the topping over the cookies and enjoy!

It’s finally soup weather and I love it!! There is nothing cozier than a hot bowl of soup on a chilly, overcast day. This is one of the many reasons I love Fall!

About two blocks from where I work is a soup place called Munteen’s. Everyday they have about 10 or more different soups  that change daily and they are all delicious! You can sample as many as you like before you decided which soup to get that day. Their tortilla soup is life changing and I’ve never had a cheesy potato soup before but I can’t imagine there’s one that tastes better than the one served at Munteen’s. So if you’re ever in Sacramento, stop by this joint for lunch. You will not be disappointed!

My sister was having a soup contest at work and asked if I wanted to submit one (technically she would be submitting it but I would get the prize). Obviously I said yes and I tried channeling my inner Munteen to make a tasty soup to enter. Behold this Tortellini Tomato Soup w/Italian Sausage.

Super easy to make and so tasty, this soup is a winner… In my mind. Unfortunately we ran out of soup for the actual contest and did not win but my sis said multiple people asked for the recipe. See, it’s a crowd pleaser! Go ahead, try it for yourself. You won’t be disappointed!

Ingredients:

  • olive oil
  • 1 lbs. Italian sausage (you could use ground turkey)
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • 1 28oz can crushed tomatoes
  • 1 32oz box of vegetable or chicken broth
  • salt, pepper, red pepper flakes, to taste
  • 1 package fresh tortellini
  • 2 large handfuls of spinach

Directions:

  1. In medium skillet, coat pan with olive oil. Add onion and garlic. Cook until onions become translucent.
  2. Add ground Italian sausage. Cook until done.
  3. In crockpot, add crushed tomatoes, broth and spices. Add meat and stir.
  4. Add tortellini and spinach.
  5. Turn on high about an hour to an hour and a half before serving. (Soup can be made on the stove and eaten right away. The crockpot was easier since it needed to be transported and heated without access to a stove.)
  6. Enjoy with grated Parmesan and fresh bread!
