Egg Salad

About a few weeks ago, my Aunt Paula gave me an early birthday gift of old-fashioned kitchen tools (which I will highlight with a post next week!) and one of these tools was designed for making hard boiled eggs. So naturally I got a hankering for hard boiled eggs and decided that I needed to make some egg salad. It seemed like the logically choice when you crave eggs.
Eggs are one of my favorite foods; definitely in my top 5 favorites. And in my family, we eat a lot of eggs. Eggs and toast/egg sandwiches are a staple and I have them for dinner frequently. Occasionally though, I crave egg salad sandwiches and homemade egg salad is the best!
I like that I can control what I put in the egg salad, especially the amount of mayo. I do not like anything too mayonnaise-y so I only add a dollop. Also, I love red onion so any excuse to add red onion to a recipe, I do. And egg salad is the perfect excuse! For an added kick, I added a few splashes of Sriracha. Yum!

Ingredients:
- 5 hard boiled eggs (I made enough for about 5 sandwiches)
- Chopped dill pickles
- Chopped red onion
- Mustard
- Mayonnaise
- Sriracha
Directions
- Peel hard boiled eggs and mash in a bowl.
- Add pickles, onions, mustard, mayonnaise, and sriracha. Combine all ingredients until incorporated. Add more if desired.
There’s something so comforting about egg salad sandwiches.
