Oatmeal Chocolate Chip Cookies
It was requested that I bring something with chocolate into work. Something with chocolate but without peanut butter… weird, I know, because peanut butter and chocolate is the ultimate pairing but that was the request. I thought of making a cheesecake or brownies or chocolate crinkle cookies with the powdered sugar on top. Instead, I settled on oatmeal chocolate chip cookies. Why? Because I like them. It was purely for selfish reasons.
Oatmeal is truly one of my favorite foods. I eat if for breakfast about 90% of the time and for some reason I never get tired of it. My love of oatmeal began in college. When I was a freshman at Davis, my friend I decided it would be fun to take a boot camp PE class. It was at 6:30am so I have no idea why we thought it would be fun, but we did. We also didn’t realize that this boot camp class was lumped together with Davis ROTC so the class was early, intense, and intimidating. We would run in two lines and chant “When my grandma was 92, she could do push-ups better than you. When my grandma was 91…” Which is sadly true because when we took the push-up test, no joke, I’m pretty sure I only got one. I am proud to say I can definitely do more than 1 push-up now.
There was a wall in the ROTC area where we checked in each class and it was covered in pictures from all the students in ROTC. One class, my friend and I snuck a picture of ourselves on the wall. We giggled and thought we were so clever and that nobody would ever notice. The next class it was gone. We laughed even harder. Another time, when we were tested for pull-ups, James, a super cute ROTC guy, had to hold our ankles and help. We were giggling so much and probably blushing that I don’t think we could even do one. Another time we checked into class and left and went to eat breakfast instead. We obviously were not too dedicated to the class but, we passed and we had fun!
I had only a 30 minute break between boot camp and Italian (Lord knows why I signed up for Italian when I took 3 years of French in high school but for some reason I convinced myself it had to be taken) so I would go to the Student Union and get oatmeal. The oatmeal at Davis was truly delicious and I know it sounds silly that I would still be talking about that oatmeal 5 years later but, it was that good! And of course, I have always loved oatmeal cookies. However, I think it’s a waste to put raisins in oatmeal cookies… why ruin a perfectly good cookie with raisins??? Chocolate chips are so much better! Hope you enjoy 🙂

Ingredients:
- 1 stick of almost melted butter
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 3 cups regular oats (not instant or 1-minute oats)
- 1 cup chocolate chips
Directions:
- Pre-heat oven to 350 degrees.
- Combine all ingredients, except oats and chocolate chips, into mixer and mix until combined.
- Mix in chocolate chips and oats.
- Scoop dough onto cookie sheet and bake for 8-10 minutes. Enjoy!
