I usually eat my morning oatmeal with a healthy (aka larger than serving size) scoop of granola and it is delicious! I eat it most mornings. But as much as I love overpriced pumpkin flax granola from the store, I decided it was time I start making my own.
The recipe is super simple and the ingredients are most items found in the pantry. This recipe is adapted from the Vanilla Almond Granola by Sally’s Baking Addiction. The original recipe calls for coconut oil. Unfortunately, the coconut oil in my cupboard was completely solid when I went to add it to so I grabbed the vegetable oil instead.
That’s what is great about this recipe: you can add what you want! If I had known how easy granola was to make, I would have started making a homemade version years ago. Seriously, this is the easiest, fool proof recipe around. Go make a big batch to enjoy this week!

Ingredients:
- 3 cups oats
- 3/4 cup slivered almonds
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup maple syrup
- 1/3 cup vegetable oil (or other oil)
- 1 tbls. vanilla
Directions:
- Pre-heat oven to 300 degrees and line a baking sheet with parchment paper.
- In one large bowl, combine almonds, oats and spices.
- In a separate bowl, mix syrup, oil and vanilla. Pour over oat mixture and make sure it’s completely coated.
- Spread out on baking sheet and bake 30-45 minutes, mixing every 15 minutes. Let cool and enjoy over yogurt, oatmeal or on it’s own!
