What?! I know… just go with me on this.
We LOVE peanut butter here on LDB. Whereas my love for Nutella is reserved solely for desserts (for fear I will eat the entire container if I have it around), peanut butter is a staple in my diet. Even now as a 25 year old, I will sometimes eat a toasted pb&j sandwich for dinner and I am never disappointed. It just always hits the spot!
One of the best things about having a food blog is the food blogging community that you are a part of! I love reading food blogs and seeing what other people create. I could spend hours making lists of new recipes to try and reading about fellow food blogging adventures in and out of the kitchen. If you have the time this weekend, get lost for a few hours perusing food blogs. You won’t regret it!
The first blog I began to actively follow was Joy the Baker. I’ve never met Joy but I’ve been following her blog for a few years now and tried some of her recipes- all which turned out amazing! One thing she posted, that I’ve been wanting to try but never have, is a peanut butter pickle sandwich…
When Blue Diamond Almonds sent goodies in the mail and these Nut-Thin crackers were included, I knew it was time. Can you think of an easier more perfect hors d’oeuvres for a party?! Don’t knock it till you try because trust me, it’s much better than it sounds and these crackers are delicious!! I ate one entire box before I even decided what to make… oops!
We are a salami, cheese and cracker family. Every holiday, get together, bday party, pre-dinner snack, etc… we always have salami, cheese and crackers. And yes, these crackers would be perfect with salami and cheese, I in fact ate it for dinner the other night, but it was time to mix it up and try something new. Peanut butter pickle crackers did not disappoint!
You can bet that at next family gathering this will be my contribution. And I can almost guarantee my family will try to resist eating them but I will heap loads of Irish guilt and make them try it. Then they will thank me because this really is that good!

Ingredients:
- Blue Diamond Nut-Thins
- Peanut Butter
- Pickles (I used spicy hamburger pickles)
Directions:
- Spread peanut butter on cracker then top with pickle. Make as many as desired!
