Sour Cream Coffee Cake

Sour Cream Coffee Cake

I just love coffee cake. It reminds me of lazy Sundays, drinking coffee and planning out the day. While traditional cake is not seen as an acceptable breakfast item, add the word coffee to the title and it’s suddenly a-okay, encouraged even. My sugar cookies use sour

Homemade Fruity Granola

Homemade Fruity Granola

Once I finally made my own homemade granola and saw how easy and delicious it was…I knew there was no going back. I’ve had ideas in my head for all different kinds of mix ins and variations of granola, just waiting to finish up each

Cinnamon Raisin Granola

Cinnamon Raisin Granola

I’ve wanted to make homemade granola forever. When I told the BF I was making some, his exact words were “you’ve said you’re going to make that forever”. Clearly I talk things up then never follow through.

This cinnamon raisin granola reminds me of my freshman year in college. Living on campus I ate all my meals in the school cafeteria (and surprisingly did not gain the freshman 15). I’ve always loved raisin bran cereal, and I was convinced all that year I was just eating an off brand of raisin bran.

Fun fact: I don’t usually have cereal for breakfast. I eat most of my cereal at night. It’s the perfect bedtime snack!

I don’t remember at what point I realized I was actually eating granola, not cereal, but it didn’t deter my obsession. I mean it’s not realllyyy that different. Chunky clusters of oats, slices of toasty almonds and raisins. AllTheRaisins.

I really can’t believe I waited this long to make homemade granola. I promise…it’s a piece of cake! (Easier, actually). If you’re like me and have been putting it off, take this weekend as an opportunity to make some. And if you already know the ease and joy of making your own granola, let me know what your favorite varieties are! Because I’m officially obsessed.

Loaded Breakfast Muffins

Loaded Breakfast Muffins

By now I think you should all know I have a thing for muffins: banana, peach, strawberry, zucchini…Kelly even made chocolate chunk so it’s safe to say she’s on the muffin train too. I love muffins because they are so quick and easy, with hardly

I love breakfast. It just might be my favorite meal of the day! With dessert a close second. Very rarely though do I actually make breakfast though. It’s usually always something quick that I’m shoving in my mouth in the car rushing to get to

Buttermilk Pancakes

Buttermilk Pancakes

I love 3 day weekends. I think every weekend should be a 3 day weekend and that working hours were 10-2 instead of 9-5. What a great schedule, don’t you think? Ok, so maybe that is not realistic but it sure is nice when these 3 day weekends pop up and this past weekend was no exception. I visited with family, had an amazing workout in which I am still sore, planned some of my trip to Ireland with my cousin, saw my best friend, finally finished watching The Sopranos (a.k.a Best. Show. Ever!!), and made these homemade buttermilk pancakes with my cousin.

I think it’s important for everyone to have some breakfast basics to whip up. Such as these homemade buttermilk waffles or Steph’s banana muffin recipe or these yummy baked doughnuts. Now, you can add these buttermilk pancakes to the list!

These pancakes are the right amount of fluffiness and in the spirit of Fall, I added some cinnamon to the batter to give the flavor that little extra umph. The only negative is that pancakes are so filling you’ll want to eat more than your stomach can hold! These are so easy to whip up and great for a weekend brunch or even breakfast for dinner. Hope you enjoy 🙂

Buttermilk Waffles

One of my favorite breakfast foods, really anytime foods, is a frozen waffle with peanut butter. Steph and I have even bonded over our shared love of peanut butter waffles- seriously the best! I could eat them every day and not just for breakfast. I have,

Banana Muffins: A Staple

Banana Muffins: A Staple

Some say I’m a picky eater (don’t listen to them…I’m infinitely better than I was as a child). However one thing I’m still picky about: Bananas. They have one little bruise? Done. Start turning slightly brown? Nope. I just can’t do it! I also can’t
