As I have previously mentioned in other posts, I am making my best friend’s wedding cake. A wedding cake is a lot of pressure so I want to make sure that it looks legit and not like some last minute cake thrown together. This cake needs to be perfect!

I bought some cake decorating tools a few weeks ago and decided this would be a great recipe to practice with. I used Sally’s Baking Addiction Yellow Cupcake recipe but baked it in a 6″ pan instead. It was delicious! Seriously, Sally’s Baking Addiction is favorite blog here at LDB; all her recipes are amazing!!

I don’t know about you but I’m big fan of early Saturday morning Food Network TV, especially The Pioneer Woman and Trisha’s Southern Kitchen. Their food always looks amazing! It might put you on the path to heart problems with the amount of butter used, but I’ll take a plate of whatever they make!

I was watching Trisha’s Southern Kitchen a few weeks ago and she made cookie dough pops. I’ve never had cookie dough pops but I love cookie dough so I figured I could make my own version. The best part, there are no raw eggs in the batter. Use your favorite chocolate chip cookie recipe and substitute 1/4 cup applesauce for 1 egg. So no fear of raw egg and the applesauce practically makes it healthy. Right?!

Instead of the classic cake pops sticks, I had extra 4th of July straws laying around. Adds a nice pop of color, don’t ya think? Make a bunch of these pops and keep them in the freezer for those times when you get a chocolate craving; these are perfect for that! Hope you enjoy!

Ingredients:

  • 1 stick butter
  • 3/4 cup brown sugar
  • 6 tbls granulated sugar
  • 1/4 cup applesauce
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • Mini Chocolate Chips (as many as desired)

for the chocolate coating

  • 1 bag dark chocolate chips
  • 4 tbls heavy cream

Directions:

  1. Line a baking sheet with wax paper.
  2. Mix all ingredients in bowl and form into balls on wax paper. Stick one straw in the center of each dough ball.
  3. Place in freezer for 30 minutes.
  4. To make the chocolate coating, mix one bag dark chocolate chips with 4 tbls heavy cream over medium. Stir until smooth.
  5. Dip each cookie dough ball into the chocolate and place back on sheet.
  6. Place in freezer for at least 2 hours and enjoy!

Happy 4th of July!! I often wonder when reading about the American Revolution and the early years of our country (I do this fairly often), what our Founding Fathers would think of America today. Do you think that too or am I just nerding out on history??

Also, as a side-note, one day when I own a house with a backyard and get a dog, preferably a husky or lab, one of the potential names of my future dog is George Washington. I also have the names of my future children picked out and they all happen to be from presidents… I swear I’m not that history obsessed I just really like presidential names! I mean, come on, how cute would it be to see a little Abe and Teddy running around?

Anyway, back to the dessert at hand: Chocolate Caramel Peanut Clusters. These are seriously the easiest thing you will ever make. In fact, if you need to whip up a dessert for today, look no further! These are inspired by my Aunt Joy’s peanut clusters that she used to make every year around Christmas. I was going to recreate her classic recipe but I had a huge hankering for caramel so I decided to incorporate caramel into the mix. These definitely hit the spot and satisfied my caramel craving!

Although this is a super simple recipe, it is done in two steps with refrigeration time in between. Step one is the caramel/peanut cluster formation. Refrigerate for at least 1 hour before step 2, which is dipping the clusters in chocolate. Refrigerate for at least another hour before serving!

Be warned, these are addicting but totally delicious! Hope you enjoy and have a wonderful 4th of July!

Ingredients:

  • 1 bag Kraft soft caramels
  • 3/4 can of cocktail peanuts
  • 1 bag semi-sweet chocolate chips
  • 1 bag white chocolate chips
  • 1/4 cup + 2 tbls heavy cream

Directions:

  1. Line two baking sheets with parchment paper.
  2. In medium saucepan, melt caramels and 2 tbls. heavy cream until smooth. Stir in the cocktail peanuts.
  3. Drop the caramel mixture into small mounds on the parchment paper. Refrigerate for at least an hour.
  4. For the chocolate coating, melt both bags of chocolate chips and 1/4 cup heavy cream in a saucepan until smooth.
  5. Using two forks, dip one cluster into chocolate mixture until completely covered. Return to baking sheet.
  6. Repeat until all clusters are fully coated and refrigerate for at least an additional hour.
  7. Enjoy as desired! (Be careful, sometimes best to let sit outside the refrigerator before eating to soften the caramel.)
