So when we stopped at an adorable farmer’s market in Tuscaloosa  and they had fresh peaches (and again last weekend at one in Little Rock…seriously, farmers markets are my fav), you know I just had to buy some.

By now everyone also knows my other half hates peaches. So while I could easily make a full peach dessert and eat the entire thing myself in one sitting, I realize I probably shouldn’t. In these situations I open up my Dessert for Two cookbook and see what Christina has to say in the matter. She scales down all her recipes into small batches, so they are perfect if you don’t want to gorge yourself into a sugar coma (if you do though, I won’t judge).

The pecans are a crunchy nutty contrast to the gooey peach filling and there are just enough spices to get you dreaming of a crisp fall day.

Small Batch Peach Crumble (adapted from Dessert for Two, pg 187 and Baking Illustrated, pg 298)

  • 1/2 c oats
  • 1/3 c brown sugar
  • 4 tbsp flour (divided)
  • 1/4 c chopped pecans
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • pinch of salt
  • 1/4 tsp vanilla
  • 3 tbsp butter, melted
  • 4 small-medium sized peaches, peeled and sliced
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  1. In a small bowl, combine the oats, brown sugar, 2 tbsp of the flour, pecans, spices, salt, vanilla and butter. Mixture will be crumbly. Set aside.
  2. In separate bowl, gently stir together the remaining 2 tbsp of flour, sugar, lemon juice and zest with the sliced peaches.
  3. Pour the peach mixture into a greased 9×6 or quart baking dish. Spread the oat topping evenly over the peaches.
  4. Bake at 375 for 30-34 minutes, until topping is golden and peaches are bubbly.
  5. Let cool and serve.

I don’t remember which came first; the dutch oven cobblers or the individual cobblers, but both are a stable in our house. I also don’t remember ever having these mini cobblers for dessert…they’re always breakfast! They are so quick and easy to put together, whenever we have a big group of friends over Dad will always whip up a bunch of different flavors and everyone picks their favorite. The ramikens make for great to-go cups for eating in the car too…just sayin

Individual Peach Cobblers (adapted from Alton Brown)

  • 1 peach
  • 2 tbsp butter
  • 8 tsp brown sugar
  • 1 c flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/2 c buttermilk
  • 1/4 c sugar
  • 1 tbsp butter (melted)
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  1. Blanch peach, peel, and cut into 16 slices. Set aside.
  2. Place 4 ramikens on cookie sheet. Divide the 2 tbsp of butter evenly between them, then sprinkle 2 tsp of brown sugar into each.
  3. Arrange four slices of peaches into ramikens.
  4. In separate bowl, mix flour, baking powder, soda, cinnamon and salt. Set aside.
  5. Mix sugar, buttermilk, vanilla and melted butter until combined. Fold in dry ingredients.
  6. Pour batter evenly into ramikens. Sprinkle with brown sugar.
  7. Bake 20-25 minutes at 350, or until golden brown.

I decided to use the fresh strawberries and blueberries I already had, but you could easily substitute any fruit in this recipe, fresh or frozen. I love the versatility of it! Raspberries, blackberries, peaches, rhubarb even…any combination you could think of.

I used the Louisiana Fish Fry Fruit Cobbler Mix, which is sold in stores here in Louisiana, but you can always buy it online if you can’t find it where you live.

Mixed Berry Cobbler with Louisiana Fish Fry Cobbler Mix | longdistancebaking.comYou’ll first melt some butter in the bottom of your dish, pour in the cobbler batter, then top with your fruit. You read that right…the fruit goes in last. I was a little wary of this, as my usual cobblers have the crust on top, but as this cobbler bakes the batter rises up and ends up almost completely covering the fruit. See? Easy as pie! Well…cobbler.

As with all our favorite desserts, this pairs perfectly with a big scoop of vanilla ice cream, especially on a hot summer day. Speaking of hot summer days…do you need a 4th of July BBQ dish?? If so, I think you just found the perfect one. It’s even patriotic colors!

Mixed Berry Cobbler (adapted from Louisiana Fish Fry)

  • 1 c blueberries (thawed if frozen
  • 2 c strawberries, quartered (thawed if frozen)
  • 1/2 c sugar
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 tbsp butter, melted
  • 3/4 c milk
  • 1 package Louisiana Fish Fry Fruit Cobbler Mix
  1. In large mixing bowl, gently stir together the fruit, sugar, cornstarch, salt, cinnamon, vanilla, lemon zest and lemon juice. Set aside.
  2. Melt the butter and pour into a glass 9×13 pan or a 10inch round casserole dish.
  3. In separate bowl, whisk the milk and cobbler mix together until smooth. Pour into the baking dish.
  4. Pour the fruit mixture on top of the cobbler batter. Do not stir!
  5. Bake at 375 for 42-45 minutes, until top is golden brown.
  6. Remove from oven and let cool before serving.
