Browned Butter Graham Cracker Cookies

Guys, first, are you watching The People v. OJ Simpson on FX?? I just started last week and watched all the episodes back to back… I’m hooked! The show is so good! Given that I was only 4 when the whole OJ trial went down, I remember absolutely nothing about it. And besides the whole “if the glove don’t fit” argument, I know zilch about what really happened. Normally any show involving crime and murder creeps me out and I have to turn the channel but I just can’t seem to turn away from this! I plan on getting completely caught up on the episodes this week!

Anywho, while I was binge watching, I had a huge craving for something sweet. It was one of those can’t really focus because I need dessert stat type of craving. So in between episodes 1 and 2, I went to the cupboard and pulled out what I had to make a batch of cookies. Then I let the dough chill in fridge for episode 2 and I baked them while watching episode 3. Multitasking at its finest!

And now I present to you- Browned Butter Graham Cracker Cookies. I used the base recipe from Bunny’s Chocolate Chip Cookies and adjusted some ingredients! I think these cookies have become my new addiction… And that’s saying a lot considering I can only buy Nutella when I’m baking with it because I’ll eat the entire jar otherwise.

I love browned butter cookies and I think from now on I will be browning the butter for all my cookies. Not only does it add a delicious caramel-y flavor to the cookies but the smell of them as they bake is amazing! It smelled like Fall in my kitchen last week and I could not have been happier! I even made them again for friends this weekend! Hope you enjoy!

Ingredients:

  • 2 sticks butter
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 cup graham cracker crumbs
  • 1 1/4 cup flour
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla

Directions:

  1. In medium sauce pan, brown butter on medium heat. Stirring fairly continually with a wooden spoon (I stir then measure out the sugar, then stir again then measure the flour, etc…). Butter will froth and foam then continually stir until its a caramel colored brown. (This whole process takes about 5-8 minutes.)
  2. Once butter is browned, turn off heat and add brown sugar and granulated sugar. Stir until incorporated and let cool about ten minutes.
  3. In separate bowl, combine flour, graham cracker crumbs, baking soda and salt.
  4. In stand mixer, add the butter/sugar mixture. Add in vanilla.
  5. Add half the flour mixture and mix until combined. Then add the egg and mix until combined.
  6. Add the remaining flour mixture.
  7. Refrigerate for at least an hour. Don’t skip this step!
  8. Preheat oven to 375 degrees. Form the chilled dough into dough balls and place on cookie sheet.
  9. Bake 11-13 minutes or until the edges start browning. Remove from oven and let cool on baking sheet for about 5 minutes.
  10. Transfer to wire rack to cool. Enjoy!

IMG_0494Seriously, oatmeal is one of my favorite meals. I usually eat it every morning for breakfast. If I don’t eat it for breakfast, there have been times when I’ve made it for dinner. A hot bowl of oatmeal is hard to beat. That is until baked oatmeal entered my life.

I’ve been doing more cooking lately, like actual cooking of meals. Gone are my days of baking desserts-I’m so over chocolate and Nutella and everything sweet…

Just kidding! But in an effort to eat healthier (most of the time) and be more conservative in my spending habits, which includes eating out less, I have been doing more cooking and meal prep at home. It’s been great; I love it! Baked oatmeal is the perfect low cost, easy to make, grab-and-go breakfast!

I make this in a 9×13 pan but since it is so filling, I don’t cut huge squares so I end up having a lot left over at the end of the week and end up tossing some out. I definitely need to work on scaling the recipe back but until then, I will be enjoying this piece right now! Enjoy!

recipe adapted from Apple of My Eye

Ingredients:

  • 2 cups oatmeal
  • 1 cup shredded coconut, unsweetened
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Handful of strawberries
  • Handful of blackberries
  • 2 cups almond milk (or any milk)
  • 2 eggs
  • 1 tbsp vanilla
  • 2 tbsp butter, melted
  • Agave (or honey)
  • chopped pecans to sprinkle on top

Directions:

  1. In mixing bowl, combine oatmeal, coconut, sugar, baking powder, cinnamon and fruit. Mix and then dump into a 9×13 pan.
  2. In a separate bowl, whisk together milk, eggs, vanilla, butter and 3 big squeezes of Agave or honey. (I know that’s not super scientific but because Agave is so sticky, I hate wasting a measuring cup on it so I just eyeball it.) Pour over pan.
  3. Sprinkle the top with chopped pecans and a drizzle of Agave.
  4. Bake at 375 degrees for 25-30 minutes. (Bake for less using quick-cook oats.)

The mint flavor was great! And I have a thing about mint chocolate chip ice cream needing to be green (I don’t like white mint chocolate chip ice cream- I don’t care what you say, it does not taste the same!) so I got the right shade of green! However, the chocolate chip part didn’t quite turn out. In fact, it didn’t turn out at all 🙁

Mint chip is my favorite ice cream flavor and I like it best from Baskin Robbins because I love their chips are more like flakes and less like chunks. It’s mint chip ice cream not mint chunk ice cream! I read on a blog this summer about using Magic Shell in the last minute or so of churning to create a chocolate chip ice cream that resembles Baskin Robbins. Well I finally decided to try it but IDK what’s up with Magic Shell these days?!?

I’m not exaggerating when I say it was missing the chocolate at first and came out in a giant sugary clump. After running the bottle under hot water for a few minutes to better shake the bottle, it was still coming out in clumps and not in the perfectly smooth chocolate coating like it promises. Clearly, Magic Shell was out of the question so I went to the next best substitute, actually an even better substitute- Nutella of course!

Well, Nutella failed me. Don’t get me wrong, it did not fail in taste, it never does, but it didn’t “chip” or “swirl” liked I hoped it would. It froze immediately… Suffice it to say, my first attempt at making mint chip ice cream failed.
