It’s beginning to look a lot like Christmas!

The holidays are always my favorite time of year! Here at Long Distance Baking, we love Christmas. We love it so much in fact, that we’ve been known to listen to Christmas music a couple times throughout the year. Every summer vacation needs at least one listen of Little Dummer Boy and Do You Hear What I Hear. Am I right??

My cousin is a 1st grade teacher and she asked me if we had any kid friendly holiday treats- holiday yummies that are cute and kids could easily help with making! Below is a list of kid friendly treats that can be altered for many holidays, not just Christmas!

1. Sugar Cookies– The holiday season would not be complete without sugar cookies and Steph’s sugar cookie recipe is to die for! Seriously, they are amazing and so fun for kids to help decorate!

2. Puppy Chow– Replace the Valentine’s red and pink M&Ms with Christmas M&M’s!

3. Cinnamon Ice Cream– What is cooler than making homemade ice cream?! This is a fun treat to make with kids because it’s so fun to see the ice cream churning and can turn into a fun science lesson! Although, I don’t quite know the science behind it myself… but I know Google does 🙂

4. Red Velvet Cupcakes– Red velvet is great any time of year but especially for the holidays! Lay out different types of holiday sprinkles and let your kids decorate the tops of the cupcakes!

5. No-Bake Cheesecake Bars– Steph decorated these bars for 4th of July but you can easily change the flag design. Use green icing to make a tree or garland and red frosting for holly berries or ornaments. The possibilities are infinite! Plus, it’s no-bake so it’s super easy to make!

6. Pumpkin Pecan Cinnamon Rolls– Cinnamon rolls are just fun to make! Be sure to include these as part of your holiday menu this year!

7. M&M Cookies– What I love about M&Ms is that they always come in holiday colors! Use Christmas M&Ms for a festive plate of cookies. Just be sure the kids don’t eat all the M&Ms in the process 🙂

I don’t know if I have mentioned this before or not, but at my wedding (which is completely non-existent at this point and purely hypothetical) I want donuts instead of cake. More specifically, I want Apple Donuts.

Ever since I was young, as in before I remember, we have been going to Apple Hill every Fall. Apple Hill is this little place about 45 minutes away that is a community of different apple farms and stands. Located in the foothills, Apple Hill is the quintessential Fall location with the mountains and trees. I think my love of Fall and the desire to live in a New England Fall stems from the yearly trips we take to Apple Hill.

Whenever we go, we always go to High Hill Ranch and have their chicken salad sandwiches for lunch. They are delicious! And while you wait in line to order lunch, you can see the caramel apples and apple donuts being made, tempting you to buy them all.

These apple donuts are AMAZING!! Seriously, the best donuts ever! If I had to chose one donut to eat for the rest of my life, it would be the apple donuts from Apple Hill. Since I clearly think they are God’s gift to baked goods, I decided it was time to recreate them at home so I can start to enjoy them year round instead of just one weekend.

I have donut pans to make baked donuts but let’s be honest, baked donuts just aren’t quite the same as fried donuts no matter how good they are. Since I didn’t have anything to cut/form these donuts, I just stuck with a cookie scoop and made donut holes. Some didn’t quite cook the whole way through because the donut holes were a little too large but the ones that did… delicious!! Apple Hill apple donuts will always be my favorite but these give them a run for their money! Hope you enjoy 🙂

recipe adapted from Heather’s French Press Pumpkin Apple Cider Doughnuts
Ingredients:

  • 4 cups flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 cup sugar
  • 2 eggs
  • 4 tbls butter, melted
  • 1 cup applesauce
  • 1/2 cup buttermilk
  • 2 apples, peeled and finely chopped

Directions:

  1. Cream together butter, sugar and eggs. Meanwhile, in separate bowl, mix together flour, cinnamon, nutmeg, baking soda, baking powder and salt.
  2. Add applesauce to butter mixture.
  3. Add flour mixture to butter mixture, alternating with buttermilk. Mix until incorporated and the dough is not sticky. If dough is too sticky, add flour 1tbls. at  a time.
  4. In a pan, pour a bottle of canola oil or vegetable oil and heat until 250 degrees. Using a cookie scoop, or something smaller, drop balls of dough into hot oil.  (If you want to make actual donuts, transfer dough onto well-floured surface and use a rolling pin to roll out about 1 inch thick and form donuts.)
  5. Fry about 2-3 minutes or until golden brown. Using a slotted spoon, remove donut holes from oil onto paper towels to cool.
  6. Once donuts are cool, melt an additional 4 tbls of butter and add cinnamon and sugar. Pour over donut holes as a glaze.  Enjoy!

In one day I got both a pumpkin spice latte and a passion tea lemonade.  My taste buds are so contradictory! I want the smells and the tastes of fall, yet I can’t quite get rid of summer and sunshine just yet. So here we are. Passion tea lemonade and a side of pumpkin bread.

I’m not a huge sweetened iced tea person. I like my “sun tea” as we called it growing up and I like it just like that: brewed on the patio in the sun and slurped down sans sugar. So it took me awhile before I ever tried the Starbucks PTL. And of course, I was hooked.

The recipe is so simple. I almost didn’t post it because the hardest step is boiling water! The beauty is you can adjust the tea to lemonade ratio to suite your tastes. You can also add some sweetener if you prefer the sugary version. I won’t judge you, though your dentist might 😉 You can also store the tea separately from the lemonade and mix your drink individually each time, which is perfect if you don’t want a large pitcher taking over the fridge.

I think what I love most about this drink is the color. Just seeing the bright pink and tasting the lemon makes me want to hold on to summer for just a  liiiitttlleeee bit longer. Lucky for me, I’m currently in Mexico! Sun and the sand and most definitely a drink in my hand. I’ll soak up a few rays for the rest of you. Kelly’s got you covered until I get back! 🙂

  •  6 Passion Tea bags
  • 6 cups water
  • 2 cups lemonade
  1. Boil 1 cup of water. Let the tea bags steep for 10 minutes.
  2. Pour the concentrated tea, remaining water and lemonade into pitcher, removing tea bags.
  3. Refrigerate until chilled.
  4. Garnish with lemon. Just because you can.
