Halloween is in one week. One week! How the heck are we already at Halloween?!? Although I no longer dress up, nothing will top 6th grade when my best friend Lauren and I were a bunch of grapes and blew up purple balloons and pinned them to our clothes, I do appreciate that during the last two weeks of October mini candy bars are of abundance. Hence the need to make Candy Bar Fudge!

Again, I’ve made something I normally don’t eat… fudge. But I had the sudden urge to make fudge and I figured the only way I would eat it, without Nutella on hand, was to add mini candy bars.

Fudge may not be my favorite thing to eat but I love making it! It’s so easy and you can add anything to spice it up. Crushed Oreos would be a nice addition scattered on top, or sprinkles, or crushed candy canes for Christmas time. You name it, you can add it!

This fudge is adapted from Six Sister’s Reese’s Fudge. As the name implies, they added a generous amount of Reese’s and they look amazing! I had enough fudge for two 8×8 pans so I took one into work and it was gone in minutes. I may not be the biggest fudge fan, but it sure is a crowd pleaser. Hope you enjoy 🙂

Ingredients:

  • 2 bags chocolate chips
  • 1 can (14 oz.) sweetened condensed milk
  • 1 tbls. vanilla
  • splash of milk
  • chopped candy (I used Twix, Reese’s, Snickers, Milky Way, KitKat, and M&Ms)

Directions:

  1. Add all ingredients, except candy bars, to medium saucepan.
  2. Melt over medium heat, stirring continuously.
  3. Pour into pans and sprinkle chopped candy on top.
  4. Let sit for a few hours and enjoy!

Ok ok fiiiinneee. Not all the basil was mine. I went to my parents and my dad risked his fingers chopping more basil for me. No really…he almost chopped his finger off and had to go to the ER. He’s ok though! He just had to give me a hard time that it was my fault. Thanks for taking one for the team Dad!

To make it up to him I decided to use his recipe for pesto. If you’ve never made pesto before, you should! There are only 6 ingredients and takes only a few minutes to whip up. The hardest part of the recipe is washing your dishes afterwards. I promise!

If you plan on using the pesto within the next week, just keep in an airtight jar in the fridge. My personal favorite way to save it is by freezing in ice cube trays. After frozen, transfer to ziplock bag and use the cubes throughout the next few months.

Pesto is great in pasta, on sandwiches, as pizza sauce…really for anything! There’s nothing better than a little taste of summer on a dark winter day.

Classic Homemade Pesto (adapted from Frugal Gourmet)

  • 1/3-1/2 c light olive oil
  • 1/4 c pine nuts
  • 2 cloves garlic
  • 4 cups basil
  • 6 sprigs parsley
  • 1/2 c parmesan cheese
  • salt and pepper to taste
  1. Place 1/3 c of the olive oil, nuts, garlic, basil, parsley, cheese in food processor.
  2. Pulse to combine until paste forms. Add remaining oil to reach desired consistency.
  3. Sprinkle with salt and pepper to taste.
  4. Put pesto into ice cube trays to freeze and cover with plastic wrap. (Made 10 tablespoon sized cubes)
  5. Once frozen, move to ziplock freezer bag.
  6. Use within 6 months of freezing.
